A bit like marshmallow and candyfloss had a baby, this colourful meringue-like confection is made from just three ingredients: egg whites, sugar, and cornflour. And because it’s both gluten-free and low-carb, it appeals to those looking for a keto-friendly bread substitute, as well as to those who just want to bake something pretty!

This jiggly, fluffy food favourite is so simple to make – here's the recipe that will have you floating on cloud nine!
for 1 serving
3 egg whites
2 ½ tablespoons sugar
1 tablespoon cornflour
Vanilla extract – few drops
Food colouring – few drops
Preheat oven to 180C and line a baking sheet with parchment paper.
Whip egg whites until frothy then gradually add in sugar and sift in corn starch, whipping until you get stiff peaks.
Add your choice of food colouring, then scoop onto a baking tray and shape into a cloud.
Bake for 25 minutes.
Cloud bread is best eaten fresh, but it can be frozen or will keep in an airtight container for up to seven days in the fridge - remember to place pieces of parchment paper between each slice to prevent sticking.
